A classic potluck cake that’s even more delicious if you make it the night before. Yummy and convenient!
Preheat oven to 350 degrees. For the cake, combine cake mix, margarine, 1/2 cup juice from the mandarin oranges, eggs, and vanilla. Beat for four minutes on medium-high. Add drained oranges and beat again until pieces are broken up and small. Pour batter into greased and floured 9 x 13 inch baking pan and bake for 25 to 30 minutes, or until golden brown and set. Remove from oven and cool completely. If desired, turn out cake onto a large platter.
Once cake is cool, blend juice from drained pineapples with the vanilla pudding mix. Add powdered sugar and mix, then mix in whipped topping. Stir in drained pineapple. Spread on cooled cake and refrigerate several hours.
To serve, cut cake into squares and top each square with a mandarin orange slice.

Our family calls this Sunshine Cake because it’s a cool summery cake…it makes the most sense to us. =)
Instead of vanilla extract, I use almond extract; and instead of vanilla pudding, I use cheesecake pudding.
I’ve managed to make it as a two layer round cake, but cupcakes were not successful. Make sure the frosting is really cold for the round cake before frosting.

Made this cake for the first time and presented it to my husband on his birthday. He loved it and so did everyone else. I made it as a layer cake and noticed that refrigerating it for awhile made the frosting so much better and also it’s flavor improved.

yes it can be made into a layer cake, but the tiers tend to slide. It would be easier to use the 13×9-inch pans and make more than one.

Thank You. I lost this recipe from my ex MIL. I couldn’t remember the amounts for the cake. I’ve seen similar recipes, but none had the oranges in them.
