It’s an easy and delicious cheesecake that I love to make . . . and eat! It’s a great dessert for when you have guests. Kids will love it too! Plus, it looks cute!
1. Crush up the biscuits (you can put them in a zip top bag, seal it, and use a mallet to smash them) and then mix the crumbs with the melted butter. Press this mixture into the base of a cheesecake pan (5 centimeters high by 23 centimeters diameter) and put in the oven for about 5 minutes at 150ºC (300ºF) just enough time for the biscuit to look a bit golden. Then remove it from the oven and put it in the fridge to cool.
2. Prepare the agar agar: Dissolve the agar agar in the water. When dissolved put it on the stove and bring it to the boil. As soon as it starts to boil, remove it from heat and let it rest for 10 minutes.
3. Meanwhile whisk together the Philadelphia cream cheese and the condensed milk until smooth. Stir in the lemon juice and the agar agar you prepared.
4. Pour the mix on top of the biscuit crust and chill for about 1 hour until set.
5. Remove from fridge and spread the jam on top of the cake. Cut up some fruit and put it on top for decoration, if you like.
6. Most important step: ENJOY IT!
