These cookies are perfect, the outside is lightly crunchy and the center is soft and chocolatey .
Preheat oven to 375ºF.
In a standing mixer, cream together softened butter and sugars until light and fluffy. Add vanilla and egg, mix until well blended. Slowly add flour, salt and baking soda, mix until well blended. Blend in chocolate chips.
Line cookie sheets with parchment paper. With a cookie scoop (preferably medium, you want the balls to be 1-tablespoon size), scoop cookie dough onto the cookie sheet 2” apart. Bake for 10 minutes. Remove from the oven and place cookies on a cooling rack.
Yields about 40 cookies.
