These easy to make cookies don’t have flour so they are gluten free. I used Splenda instead of sugar to make them low carb as well. Oh, and they are delicious!
Preheat oven to 350ºF. Line baking sheet with parchment paper.
Beat egg in a large bowl with a mixer until foamy. Add remaining ingredients; beat until well blended. Shape into 1-inch balls. Place 2 inches apart on baking sheet. Flatten gently with a fork.
Bake 10 minutes or until lightly browned.
