A light, fluffy cookie made with Greek yogurt and Reese’s Peanut Butter Chips.
Preheat oven to 375 F
In a bowl add flour, baking soda and salt; set aside.
In a large bowl add yogurt, stevia and brown sugar; mix until blended. Beat in eggs and vanilla extract, mix until smooth. Gradually add flour mixture until combined. Stir in peanut butter chips.
Drop by well-rounded teaspoons onto ungreased cookie sheets. Bake 6-8 minutes until lightly golden brown then remove from oven.
Leave cookies on the cookie sheet for about a minute and then place onto a cooling rack to finish cooling. I recommend storing in the refrigerator.
