Description

This is a Mexican cookie that we make at Christmas. My grandmother got it from a neighbour when she lived in South Texas.
I’ve tried to see how much the recipe makes, but my family drifts over whenever I make them and each person takes a bunch home.
They’re delicious little cinnamon-sugar coated pie crusts.

Ingredients

  • 5 pounds Flour
  • 1 cup Sugar
  • 1 teaspoon Dry Active Yeast
  • 1 cup Water
  • 3 teaspoons Anise Extract
  • 3 pounds Shortening
  • 1 bag Sugar (for Cinnamon Sugar Mixture)
  • 1 box Ground Cinnamon, To Taste (for Cinnamon Sugar Mixture)

Preparation

In a large bowl, make a cinnamon sugar mixture. Set aside.

Add anise extract to the cup of water.

Stir flour, sugar and yeast together.
Add shortening, leaving approximately 1/2 inch in can.
Gradually add water/anise mixture.
Work the dough until it is one big ball.

Using small amounts of dough, roll out and cut with a small cookie cutter (no larger than 1 inch), or cut dough into small shapes with a knife or pizza cutter.

Bake cookies at 325F for approximately 15-17 minutes or until they are golden brown.

Immediately put the cookies in the large bowl with the cinnamon sugar mixture and coat cookies with the cinnamon sugar before transferring them to a serving bowl.
