Description

Oatmeal and dark chocolate comined into a cookie. A great treat for a sweet tooth.

Ingredients

  • 1-½ cup Old-fashion Rolled Oats (not Quick-cooking)
  • ½ cups White Whole Wheat Flour (or All-purpose)
  • ¼ teaspoons Baking Powder
  • ¼ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 6 Tablespoons Unsalted Butter, Room Temperature
  • ½ cups Packed Brown Sugar (light Or Dark)
  • ¼ cups Sugar
  • 1 whole Egg
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Vanilla Extract
  • ½ cups Good-quality Dark Chocolate, Chopped

Preparation

Preheat oven to 350 degrees. Whisk together oats, flour, baking powder, baking soda, and salt; set aside. Beat butter and sugars until light and fluffy. Add egg, cinnamon and vanilla; beat until combined. Gradually add oat mixture; beat until combined. Stir in chopped chocolate.

Drop dough by round tablespoonfuls, 2 inches apart, onto two baking sheets lined with parchment paper. Bake until cookies are golden but still soft, about 12 to 16 minutes. Cool for 5 minutes on the sheets; transfer cookies to a wire rack to cool completely.

The batch I made turned out taller and more puffy then the picture shows, but they were delicious! My roommates ate them all in less then 30 minutes.
