Description

Tastiest cupcake ever, made with ACTUAL OREOS!

Ingredients

  • ½ cups Crushed Oreos
  • 2 Tablespoons Cocoa
  • 1 cup Flour
  • 2 teaspoons Baking Powder
  • ½ cups Butter
  • 1 cup Sugar
  • 3 whole Eggs, Separated
  • 1 cup Milk, Scant

Preparation

In your food processor, mix the Oreos and the cocoa until you have a fine powder. Mix with flour and baking powder and sift. In a mixing bowl, cream together butter and sugar. In a separate bowl, beat egg yolks until light, then add milk. Add this to your dry mixture and mix well. In ANOTHER bowl, beat egg whites to stiff peaks and gently fold into the batter. Fill cupcakes a little more than 3/4 of the way full and bake at 400 degrees until a toothpick inserted comes out clean, about 15-20 minutes for babycakes.

I love baking. I’m good at it. I start there so you know where I’m coming from…..this is a so-so recipe. I’d rather eat my oreos than put them in here, they did nothing spectacular for this batter. I generally prefer a more low maintenance batter, but decided to try this recipe for mt daughters birthday. It was not worth all the work or all the bowls that have to be washed. If not for the chocolate buttercream frosting, this cupcake would not be worth eating…..
