A new twist on an old classic.
1. Preheat oven to 350ºF.
2. Beat butter, brown sugar, and granulated sugar in a bowl until creamy. Add eggs and vanilla; beat well. Combine flour and baking soda, add to butter mixture; beat well. Stir in oats and cinnamon chips.
3. Drop by heaping tablespoonfuls onto ungreased cookie sheet. Bake for 10-12 minutes or until light brown. Cool 3-4 minutes on cookie sheet then transfer to wire racks to cool completely.
