Description

Why don’t we often find dates used in modern recipes? After thousands of years of culinary use, they seem to have fallen out of favor. I remember my mother making skillet cookies and dates were one of the ingredients. I had not had them in many years. Recently I made them. I was surprised that these cookies tasted even better than I remembered. Unusual, but very nice.

Ingredients

  • 2 cups Crisp Rice Cereal
  • ¼ cups Chopped Nuts
  • ¼ cups Gumdrops, Cut Into Small Pieces
  • 1 cup Chopped Dates
  • ¾ cups Sugar
  • ½ cups Butter
  • 1 whole Egg Well Beaten
  • 1 teaspoon Vanilla
  • Powdered Sugar For Rolling Cookies

Preparation

In a large bowl place crisp rice cereal, chopped nuts and pieces of gumdrop candies.

In a skillet place the dates, sugar and butter. Add one beaten egg and mix well. Turn the heat to low. Stirring constantly, continue to cook over low heat just until the mixture begins to pull away from the sides of the skillet. Remove from heat and add 1 teaspoon of vanilla.

Working quickly pour date mixture over cereal mixture and mix well. When cool enough to handle scoop up about a teaspoonful and form into a ball. Immediately roll in powdered sugar and set in a container or on plastic wrap. Store in a covered container.

Memories………. My Aunt used to make these too ! I always looked forward to having them at Christmas. Thanks for posting the recipe, my aunt has Alzheimer’s so she will never be able to make them again, and I never thought to ask for the recipe before she got sick.
