Description

A healthier cross between a cookie and a brownie bite with a touch of mint flavor.

Ingredients

  • FOR THE COOKIES:
  • ¼ cups Unsalted Butter, Softened
  • ¼ cups Greek Yogurt
  • ⅔ cups Granulated Sugar
  • 1  Egg
  • ¼ teaspoons Mint Extract
  • 1-¼ cup White Whole Wheat Flour
  • ¼ teaspoons Salt
  • ½ teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ⅓ cups Cocoa Powder
  • ⅓ cups Bittersweet Or Dark Chocolate Chips
  • FOR THE GLAZE:
  • 4 Tablespoons Powdered Sugar
  • 1 teaspoon Water
  • 1 dash (Scant) Peppermint Extract

Preparation

Preheat oven to 350 F.

In a large bowl using an electric mixer, cream butter, yogurt and sugar together until very creamy. Add egg and mint extract and beat until pale and smooth, about 2-3 minutes.

In a smaller bowl combine flour, salt, baking powder, baking soda, and cocoa powder. Slowly mix dry ingredients into the wet ingredients. Gently stir in the chocolate chips.

Scoop about ½ tablespoon sized scoops of batter onto parchment paper lined cookie sheets, leaving 1 inch between the brownie bites (I use a small cookie scoop).

Bake for 6-8 minutes or until batter is set. Remove pan from oven. Cool them slightly on the tray and then cool them completely on wire rack.

Once cookies are cooled, mix the powdered sugar with the water and the tiniest drop of peppermint extract (be careful, it’s very potent stuff). Drizzle glaze over brownie bites while still on cooling rack. This step is not necessary but dresses up these little bites.
