Description

Light and fluffy cake with a hint of lemon and vanilla.

Ingredients

  • FOR THE CAKES:
  • ½ cups Butter, Softened
  • 1 cup Granulated Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla Extract
  • 1 whole Large Lemon, Zested (about 5 Teaspoons Zest)
  • ½ cups Sour Cream
  • 1-½ cup All Purpose Flour, Sifted
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 3 Tablespoons Milk
  • FOR THE GLAZE:
  • ¼ cups Fresh Lemon Juice
  • ½ cups Granulated Sugar

Preparation

Preheat oven to 350ºF. Spray mini pans with nonstick cooking spray and set aside.

In a large bowl, cream butter and sugar until light and fluffy. Stir in eggs, vanilla, lemon zest and sour cream. Scrape the sides and mix again. With the mixer on low speed, incorporate all dry ingredients until just combined, then stir in the milk. Scrape the sides and mix a few more times by hand. Spoon batter equally into prepared pans. Bake 15-20 minutes or until edges are golden brown and are baked thoroughly. Use the toothpick method to see if they are done. Mine were done at 18 minutes.

While lemon loaves are baking, mix ingredients together for the glaze and microwave on high for 2 minutes, stirring every 20 seconds or so to dissolve the sugar into the lemon juice. The glaze is done once the sugar has dissolved.

Once loaves come out of the oven, cool at least 15 minutes before removing from the pans. Spoon glaze over the loaves and continue to cool completely. Store in airtight containers until ready to serve.

I know you said it makes 8 mini loaves but what size mini loaf pans did you use?

Just made. Did all as directed except zested 2 small-medium lemons. This batch makes 4- 4 1/2 cups batter.( I have a WILTON 4-CAVITY LOAF PAN. Each cavity holds 2 cups water.) I poured 1 measured cup into each cavity then a spoonful of the leftover batter into each cavity. Pound pan on flat surface to remove air bubbles. Baked 20 minutes. (Test every 2 minutes after 18 minutes. DELICIOUS. LEMONY. More of a light easily broken cake than bread. 1 broke, so grandbaby and I will :) suffer :) and eat it.

What size loaf pans did you use? I used the small foil ones and only filled two and it took 35 mins. And do you pour the glaze over the loaves as it comes out of the oven so it sucks it all up or do you wait the 15 mins and just pour it over the top after you’ve taken them out of the pan? If so, does it just dribble off?

Holy Cow these mini loaves are AWESOME! Very easy recipe and I agree with Christie that the glaze makes the loaf. Very moist and delicious!

These are very tasty! They’re definitely cake-like, not like a lemon bread if that’s what you’re thinking (like me). But that is NOT a bad thing! The lemon flavor is so perfect…not subtle at all! I halved the recipe and only got two loaves out of it, and they weren’t even full. I think the size of the mini loaf pans must vary widely. You can make this without the glaze and it’ll have a delicate but good lemon flavor, but the glaze greatly enhances the lemon flavor.

Delicious! I made the mini loaves and wrapped them as shown and received many, many compliments. I made a couple extra for family who devoured them in no time. Moist, melt-in-your-mouth and very easy to prepare.
