Description

Soft and chewy cookies stuffed with M&M’s and marshmallows.

Ingredients

  • 1 cup Unsalted Butter
  • ¼ cups Vegetable Oil
  • 1 cup Light Brown Sugar
  • ½ cups Granulated Sugar
  • 2  Large Eggs
  • 2 teaspoons Vanilla
  • 1-½ teaspoon Baking Soda
  • 2 Tablespoons Cornstarch
  • 1 teaspoon Salt
  • 3-¼ cups All-purpose Flour
  • 1 cup Mini Marshmallows
  • 1 cup Pink And Red M&Ms

Preparation

Cream together the butter, vegetable oil and sugars using a stand mixer until well combined and slightly lighter in texture.

Mix in the eggs one at a time to prevent the batter from separating. Then mix in the vanilla followed by the baking soda, cornstarch and salt. Turn your mixer on low and slowly add the flour a cup at a time.

Remove the bowl from the mixer and stir in the M&Ms and marshmallows using a wooden spoon.

Line a baking tray(s) with parchment paper or a silicon baking mat then use a cookie scoop or heaping tablespoon to measure out evenly sized balls of dough. Place them about 2 inches apart on the trays. Then place the trays of cookie dough balls in the freezer for 30 minutes.

About 10 minutes before the dough is due to come out of the freezer, preheat your oven to 350 F. Once the oven is up to temperature pop one tray in the centre of the oven and leave it to bake for 8-10 minutes.

Pull the cookies out of the oven and leave them to cool on the baking tray for 10 minutes before transferring them to a cooling rack to cool completely. Repeat baking the remaining trays.
