Description

An intensely maple flavored cookie with a maple cream filling. New England in cookie form.

Ingredients

  • FOR THE COOKIES:
  • 3 sticks Butter, Softened
  • 1-½ cup Sugar
  • ¼ cups Molasses
  • ¼ cups Maple Syrup
  • 4 whole Eggs
  • 1-½ cup Walnuts
  • 6 cups Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1 Tablespoon Maple Flavoring
  • FOR THE FILLING:
  • 1 stick Butter, Softened
  • ¼ cups Shortening
  • 1 Tablespoon Milk
  • 1 Tablespoon Maple Flavoring
  • 4 cups Confectioners Sugar

Preparation

For the cookies:
In a stand mixer, cream together butter, sugar, molasses and maple syrup until light and fluffy. Add one egg at a time and mix just until incorporated.

Place walnuts in a food processor and pulse until finely ground. Pour walnuts into a large mixing bowl and add flour, baking powder and salt. Stir to combine.

By the heaping spoonful, add the dry ingredients to the wet. Mix just until combined. Add maple flavoring and mix over medium speed for 2 minutes.

Refrigerate the dough for at least 1 hour. Roll the dough out ¼” thick and cut into your desired shape.
Bake in a 350ºF oven for 10 minutes. Cool cookies on cooling rack.

For the sandwich filling:
Mix all ingredients for sandwich filling until light and fluffy. Spread on one cookie and top with another.
