Lemon balm, an herb that resembles mint, gives these butter cookies a distinct fresh lemon flavor.
Grind lemon balm leaves in a mortar and pestle, or chop finely. Cream butter and sugar until fluffy. Add the egg yolks, salt, lemon juice and lemon balm leaves. Gradually add the flour and soda and mix together until a soft dough forms. Form balls the size of walnuts. Dip the top side in sugar. Press flat with a fork. Bake at 350 degrees for 10 to 12 minutes or golden brown on the bottom.
