Delicious shortbread with key lime glaze. Goes perfect with an iced matcha latte.
If you’re using coconut sugar, grind it in a coffee or spice grinder to get it into a fine powder. Beat sugar, butter, and lime zest together. Add spelt flour, all-purpose flour, arrowroot starch, and lime juice. If your dough is too soft, add 1 tablespoon of all-purpose flour at a time until crumbly.
Roll dough into a ball and chill for 30 minutes. Preheat oven to 350°F.
Roll out dough to 1/2 to 3/4 inch thickness. Cut out cookies and place on lined baking sheet. Bake for 10–15 minutes. Cool on a wire rack and enjoy!
Notes: If you do not have spelt flour, just substitute more all-purpose flour.
