Description

A soft and chewy cookie that tastes just like the signature cookie of the DoubleTree Hotel!

Ingredients

  • ¾ cups Unsalted Butter, Softened
  • ½ cups Plus 2 Tablespoons, Granulated Sugar
  • ½ cups Plus 2 Tablespoons Light Brown Sugar
  • 1 whole Large Egg
  • 1-½ Tablespoon Vanilla Extract
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 1-¾ cup All-purpose Flour
  • ½ cups Oats
  • 1-½ cup Semi Sweet Chocolate Chips Or Chunks
  • ¾ cups Macadamia Nuts, Chopped

Preparation

Preheat oven to 350ºF.

In a large mixing bowl, cream butter, all the granulated sugar and all the brown sugar together till light and fluffy, 2-3 minutes. Add egg and vanilla and blend until well combined. Mix in baking soda, salt and flour, being careful not to overmix.

Using a wooden spoon, stir in oats, chocolate chips, and macadamia nuts.

Drop by rounded tablespoonfuls onto baking sheets.

Cook 11-14 minutes until very light golden brown and edges are set. Cool on pan 2-3 minutes. Remove to cooling racks and cool completely before storing.

These cookies were excellent! I will add this to my recipe box at home without changing a thing. They were a little deceptive while baking because the centers looked undercooked even when they were done. I resisted the urge to overbake and was rewarded with some really awesome cookies! Thanks for sharing!
