Description

I tried to think of a clever name for these cookies, but apparently I’m brain-dead or unimaginative or whatever. Hmm, not unlike a zombie.

These cookies are crispy, chewy, oat-y, chocolatey, coconutty and insanely terrific. Just make them then eat them.

Ingredients

  • 1 stick Unsalted Butter, Room Temperature
  • ½ cups Crisco
  • 1 cup White Sugar
  • 1 cup Brown Sugar
  • 1 whole Egg
  • 2 whole Egg Yolks
  • 1 teaspoon Vanilla
  • 1 teaspoon Salt
  • 1-½ cup Oatmeal
  • 1 cup Coconut, Shredded
  • 1 cup Chocolate, Chopped Or Chips
  • 2 cups Flour
  • 2 teaspoons Baking Soda

Preparation

Cream butter, shortening and sugars. Add whole egg, yolks and salt, mix well. Add oats, coconut, chocolate, flour and baking soda. Mix well to incorporate flour and soda.

Drop cookies onto ungreased cookie sheet using a 1-ounce cookie scoop. Bake for 14 minutes at 375ºF.

delicious! uniquely chewy and crispy and nutty.
