Desserts are a tough spot when it comes to eating healthy, but when the dessert itself is healthy, it’s all good. This is a grain-free, sweet, and chewy cookie that will please any crowd.
Preheat oven to 375°F. Combine the first 5 ingredients (oats through sugar) in a food processor or blender (I used a Ninja). Pulse to combine. Put the raisins, oil and milk into a bowl and then mix in the dry ingredients mixture. Using a tablespoon, scoop dough onto a greased cookie sheet spacing them about 2 inches apart. Bake for 6 minutes then remove from oven and allow to cool 5 minutes before serving.
