Description

These are the easiest frosted eggnog cookies—made with a cake mix.

Ingredients

  • FOR THE COOKIES:
  • 1 cup Dry Yellow Cake Mix
  • 3 Tablespoons Unsalted Butter, melted
  • 1 whole Large Egg Yolk, White Reserved For Another Use
  • 1 Tablespoon Cold Eggnog
  • ¼ teaspoons Freshly Grated Nutmeg Plus Extra For Garnish
  • FOR THE FROSTING:
  • ⅓ cups Powdered Sugar
  • 1 Tablespoon Eggnog (double This Amount If Needed)

Preparation

Preheat the oven to 350 F.

In a small bowl, stir together all of the cookie ingredients with a wooden spoon. Do not over-mix.

Divide the cookie dough into eight balls, and space them evenly on a parchment paper- or Silpat-lined baking sheet.

Bake for 9 minutes. Remove pan from oven and set on a rack. Let cookies cool for 2 minutes, then move them to a cooling rack to cool completely.

Before serving, make the frosting by beating together the powdered sugar and eggnog in a small bowl. If the frosting is dry, add additional eggnog to get it going. Frost the cookies and decorate with extra nutmeg.
