Description

A super easy dessert, ready in 30 minutes, that is always a huge hit! You’d never know that it’s whole wheat and butter free! Perfect for Easter!

Ingredients

  • ¾ cups Coconut Oil, At Room Temperature (should Be The Consistency Of Softened Butter, Not Melted)
  • 1 cup Packed Brown Sugar
  • 1-⅓ cup Plus 1 Tablespoon, Whole Wheat Pastry Flour
  • 1-⅔ cup Old Fashioned Oats
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 4 cups Marshmallow Bunnies (or Regular Marshmallows), Or More As Desired
  • 1-½ cup White Chocolate Chips

Preparation

1. Preheat your oven to 375 F and spray a 9×13 inch baking pan with cooking spray. Set aside.
2. In a large mixing bowl using an electric hand mixer, cream together the coconut oil and brown sugar until smooth.
3. Stir in the flour, oats, baking soda and salt and mix until well combined.
4. Set aside about 1⅓ cup of the crumbs and press the rest of the crumbs into the bottom of the prepared baking pan.
5. Sprinkle the marshmallows and chocolate chips over the pressed crust.
6. Top with the remaining crumb mixture and bake for 20-25 minutes, or until the marshmallows are just turning golden.
7. Let the bars cool in their pan before cutting, or else they won’t set and will be a a lumpy mess.
