Description

A unique, ultra moist, lemony take on lemon pound cake using a cake mix and package of lemon Jello pudding powder. Baked in a bundt pan!

Why “downhill granny?” Because I had two “grannies” in the same small town, one who lived at the top of a big hill and one who lived at the bottom. This is “Downhill” Granny’s recipe.

Ingredients

  • FOR THE CAKE:
  • 1 package (18.25 Oz. Box) Betty Crocker White Cake Mix
  • 1 package (small 4-serving Size Box) Lemon Jello Pudding Powder
  • ¾ cups Water
  • ⅓ cups Lemon Juice
  • ½ cups Vegetable Oil
  • 4 whole Eggs
  • _____
  • FOR THE ICING:
  • ¼ cups Butter, Softened
  • 1 cup Powdered (Icing) Sugar
  • 1 whole Lemon, Lime Or Orange, Zest Only
  • 3 Tablespoons Lemon Juice

Preparation

Add all cake ingredients into a large mixing bowl and stir well to combine. Stir or beat on medium speed for two minutes or until well combined. Pour into a greased bundt pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Do not overbake.

Lets stand for 10 minutes and then turn out of the pan onto a plate. “Profusely perforate” (thank you, Alton Brown) the top with a toothpick.

Icing:

Mix softened butter with icing sugar, zest and lemon juice. Stir until free of lumps. Add milk or more icing sugar until it reaches the consistency of cake batter.

Ice cake while still warm.

Serve warm or at room temperature.

It’s delicious. I’ve made it twice. The baking temperature wasn’t given so I baked for 40-45 minutes at 350. It’s moist, tamgy and yummy.
