Delicious gluten-free and dairy-free peanutbutter cookies that only need 4-ingredients and less than 15-minutes in the oven!
Preheat oven to 350ºF. Line a baking sheet with parchment paper.
Place peanut butter and coconut sugar into a bowl and mix until combined. Gradually add coconut flour until you have a batter-like consistency.
Use a cookie scoop and place portions on baking sheet. Bake for 10–12 minutes until lightly golden. Let cool.
In a separate bowl, break up chocolate bar and place in a bowl. In 10-second increments, melt in the microwave until smooth.
Drizzle chocolate on top. Place cookies in the fridge to harden the chocolate and firm up the cookies.
