Description

Soft, chocolate cookies made with Bailey’s Irish Cream.

Ingredients

  • 1 cup Butter, Softened
  • 1-½ cup Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla Extract
  • 8 Tablespoons Bailey's Irish Cream Liqueur
  • 2-⅔ cups All-purpose Flour
  • ½ cups Cocoa Powder
  • 1 teaspoon Instant Coffee Powder
  • 1-¼ teaspoon Baking Soda
  • ¼ teaspoons Salt
  • 1 cup White Chocolate Chips
  • ½ cups Milk Chocolate Chips

Preparation

Cream butter, sugar, eggs and vanilla until fluffy. Add in Bailey’s one tablespoon at a time. Add flour, cocoa powder, instant coffee, baking soda and salt and mix until combined.

Fold in chocolate chips. Refrigerate dough for 4–6 hours.

Roll into balls and set on a baking sheet.

Bake at 350ºF for 8–10 minutes.

Holy Guacamole Batman, these are amazing! I had to force myself to put the dough in the fridge lest I eat it all and not get any of the delicious pillowy goodness that are these cookies.

Tinav – I honestly am not sure if it does or not! But you can still taste the flavor of the Bailey’s in the cookies.

These were so great, I’m planning on making another batch to bring to Christmas celebrations. I used semisweet chips and Starbucks Italian Roast Via. Since I knew it would be stronger, I only used 1/2 tsp and that seemed to do the trick.

I made these exactly as directed and they are delicious. Bailey’s in hot chocolate is my favorite treat and these cookies reminded me of that. I will definitely be making them again.

These were really good! I had trouble waiting to make them. I kept eating the dough. Nom, Nom, Nom! Sent them to a party with my husband, they were a hit!

Excellent recipe! I didn’t chill the dough at all (too lazy and time constraint) and they came out very soft and fluffy. The coffee flavor was a little strong, but I used a Stabucks VIA blend that said it was strong on the box, so that’s probably my own fault. All in all a great cookie for a coffee lover.

Awesome cookies! I wanted to try something new & different than other double chocolate cookies, and this was it. I used semi-sweet chocolate chip instead of the milk ones since that was all I had on hand, but I think it was a good swap. Milk chocolate would have made these super sweet. Didn’t last long at all! I had none to take home!
