Description

Soft, chewy dark chocolate chip cookies that are spiked with red wine!

Ingredients

  • 1-½ cup All-purpose Flour
  • ¾ cups Special Dark Cocoa Powder (regular Cocoa Could Be Substituted)
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Baking Soda
  • ¾ cups Granulated Sugar
  • ¾ cups Dark Brown Sugar
  • 1 stick Unsalted Butter, Softened
  • 1 whole Egg
  • ¾ teaspoons Real Vanilla Extract
  • ½ cups Merlot
  • 10 ounces, weight 60% Cacao Bittersweet Chocolate Chips (like Ghirardelli)

Preparation

Preheat oven to 375ºF.

In a medium bowl combine, the flour, cocoa, salt and baking soda. Stir and set aside.

In a large bowl, cream together the sugars and butter until light and fluffy. Add the egg, vanilla and Merlot. Once combined, gradually add in the dry ingredients and mix well after each addition. Fold in chocolate chips and spoon out by rounded tablespoonfuls onto a prepared baking pan, leaving 2 inches or so in between.

Bake in the preheated 375ºF oven for 8-10 minutes. Let cool slightly before transferring to a wire cooling rack.

I like using a silpat. If you grease you may end up with a crispy edge, not that it would be terrible if you did., but parchment would also work!

I must be completely blind, but I don’t see on this recipe how to “prepare” the pans – grease them? Parchment paper? I’m trying this recipe today, and hoping that greasing the pan will be sufficient.

I made these last night but realized I only had Malbec at home so I used that instead of Merlot, and they came out amazing! I also used regular cocoa powder (Ghiradeli) but ran out so I grated bittersweet baking chocolate into the batter. So easy and delicious! Thanks for sharing the recipe!!

I couldn’t find dark cocoa powder at my small grocery store so I had to substitute regular cocoa powder but the cookies were wonderful!
