These cookies are a perfect post-nap snack. Sugar-encrusted, crumbly cookie surrounding dark gooey chocolate, and then the peanut butter filling kinda sneaks up on you … I mean, seriously, what more are you looking for in a cookie?
1. Preheat oven to 350 F. In a large mixing bowl, cream peanut butter, butter, and brown sugar until well blended. Add eggs and vanilla and mix to combine.
2. Add flour, xanthan gum, and salt and mix well. Refrigerate dough for 1 hour or until firm.
3. Place granulated sugar on a plate. Scoop the dough by the teaspoon and roll into balls. Then roll balls in the sugar. Place the balls two inches apart on an un-greased cookie sheet. Press one peanut butter cup in the center of each cookie. Bake for 7-10 minutes or until cookies puff up around the cups.
Note: These cookies are gluten free, but they don’t have to be. If you aren’t following a gluten free diet, just use all-purpose flour and cut the xanthan gum.
