The perfect shortcake topped with fresh strawberries and ice cream is summer in a bowl. This shortcake is soft, fluffy, and has an amazing crumb topping. My hunt for the perfect shortcake recipe came to an end when I found this one.
Combine first 4 ingredients and mix together like a pie dough until crumbly. Set aside 3/4 cup of the crumbs mixture. Add buttermilk, baking soda, and vanilla extract to the remaining crumbs. Pour into a greased 8×8 inch pan. Sprinkle with reserved crumbs on top. Bake at 350 degrees F for 30-40 minutes or until done. Serve with strawberries or other seasonal fruit. Also great served with ice cream.
