These soft, chewy cookies have a hardiness from the oats and a chocolaty sweetness to finish them out.
In a medium bowl mix together flour, quick oats, salt and coconut. Set aside.
In a mixer, blend the softened butter together with the sugars. Add the eggs and vanilla. Once well-combined, slowly add dry ingredients to the mixer. The batter will be thick.
Add the chocolate chips and blend them into the mix by hand. Add the chopped walnuts and blend them into the mix by hand.
Place tablespoon-sized dollops onto a greased cookie sheet. Bake at 350ºF for 12–14 minutes.
