Description

Coffee-flavored fridge cookies.

Ingredients

  • 2 teaspoons Instant Coffee
  • 1 teaspoon Hot Coffee
  • 1 teaspoon Vanilla Extract
  • ½ cups Softened Butter
  • ¾ cups Packed Brown Sugar
  • 1 whole Egg
  • 1-½ cup Flour
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Salt
  • ½ teaspoons Cinnamon
  • ½ cups Chocolate Dessert Sprinkles

Preparation

Dissolve instant coffee into hot coffee. Add vanilla to the mix, too. Mix butter, brown sugar, egg and coffee mixture in large bowl with an electric mixer until light and fluffy. In a separate bowl, mix flour, baking powder, salt and cinnamon. Add the dry flour mixture to the egg/sugar mixture and blend until combined.

Divide the dough into two parts. Shape each half into a 6-7 inch roll. Roll in the chocolate dessert sprinkles. Then wrap in plastic wrap and refrigerate for 2 hours.

Cut rolls into 1/4 inch slices. Place on an ungreased baking sheet about 1 inch apart. Bake at 375 degrees for 6 to 8 minutes, or until firm. Cool on a rack.

Makes about 3 dozen cookies.

These cookies are amazing!!!! DH loves them and he doesn’t like coffee ice cream or other coffee flavored treats. I am making a double recipe for the second time today!

I made these and I wasn’t very good with the slice and bake process I suppose. I couldn’t ever get the dough even stiff enough to roll into a log to refrigerate, it was always too sticky. So I ended up doing a drop cookie with them. Not bad that way.
