Coconut Cornflake Cookies

Description
Soft and chewy. Don’t let the coconut and cornflake mixture deter you. These cookies are quite yummy.
Ingredients
- 1 cup Shortening
- 1 cup Sugar
- 1 cup Brown Sugar
- 2 whole Eggs
- 1 teaspoon Vanilla
- 2 cups Flour
- 1 teaspoon Baking Soda
- ¼ teaspoons Salt
- ½ teaspoons Baking Powder
- 2 cups Coconut
- 2 cups Cornflakes
Preparation
Cream together shortening, sugar, and brown sugar. Mix in eggs and vanilla. Mix in flour, baking soda, salt, and baking powder. Fold in coconut and cornflakes. Drop by rounded tablespoonfuls onto cookie sheet. Bake at 350° for 10 minutes.
