Description

This is a simple, simple, simple addictive cookie recipe. Bet you can’t eat just one.

Ingredients

  • 1 stick Unsalted Butter, At Room Temperature
  • 1 cup Granulated Sugar
  • 1 whole Egg, At Room Temperature
  • 1 teaspoon Vanilla Extract
  • 1-½ cup All-purpose Flour
  • ¼ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 1 cup Cocoa Krispies Cereal

Preparation

Preheat the oven to 350 degrees F. Line cookie sheets with parchment paper.

In a large mixing bowl or stand mixer, cream together the butter and sugar until fluffy. Add the egg and vanilla, and beat until smooth.

Whisk together the flour, baking soda and salt. Add to the butter mixture and mix well.

Stir in the cereal by hand.

Scoop the dough by the tablespoon onto the cookie sheets. Bake for 10 to 12 minutes until bottoms are golden brown. The top may look soft, that is OK. Remove from oven and let sit on cookie sheet for 2 minutes. Transfer to a cooling rack.

NOTES: I think these are much better if cooled completely before eating. Also, this is a great time to use the convection setting on your oven, if you have it. I think convection bakes cookies more evenly without having to rotate your pans. The baking time and temperature doesn’t change if using convection.
