Sweet and melt in your mouth shortbread cookies with a hint of lemon and orange. Perfect for spring!
Cream together butter and sugar, orange zest and lemon extract. Then add the flour, 1/2 cup at a time. The cookie dough will become thicker and pull away from the sides of the bowl.
Take the dough and place on a large piece of parchment paper or foil. Shape into a long log. Wrap firmly with the parchment paper to keep shape. Place in the freezer for 20 minutes to firm up.
Unroll the dough and cut into 1/2-inch pieces and bake at 375F for 8-10 minutes. Cookies should be lightly golden when done. Do not over bake.
While cookies are cooling, make the glaze.
Combine melted butter, powdered sugar, and fresh orange juice and whisk until no lumps appear.
Drizzle glaze on top of cooled cookies- and enjoy! These cookies are a hit every time!
