Description

Triple Berry Cheesecake Cake Bites are the perfect little ball of cake and fruit… Simple and easy to make, they will wow your friends and family!

Ingredients

  • 1 box White Cake Mix (18 Ounce Box)
  • 3 whole Eggs
  • 1 teaspoon Vanilla Extract
  • 1 cup Milk
  • 8 ounces, weight Cream Cheese, Softened
  • 1 cup Frozen Triple Berry Mix, Thawed And Juices Squeezed Out
  • 2 Tablespoons Heavy Whipping Cream
  • 1 pound White Candy Coating Or Melting Chocolate
  • 2 Tablespoons Vegetable Oil

Preparation

Mix together the cake mix, eggs, vanilla and milk. Your batter will be thick. Pour batter into a buttered 9×13 baking dish. Bake at 350 degrees F for 24-28 minutes. Remove from the oven and allow the cake to cool completely.

Take your cooled cake and cut into 4 quarters. Gently trim off any browned edges. This will make your cake bite cleaner and more beautiful in color. Crumble the cake into a large bowl, one quarter at a time.

Add softened cream cheese, berry mixture and heavy cream. Stir with the back of a spoon until the mixture forms a thick “play-doh” like consistency.

Using a small cookie scoop to keep the cake bites even, shape a cake bite and place on a cookie sheet covered in wax paper. Once all cake bites are done being shaped, place in the freezer for 20 minutes to harden.

Melt candy coating or chocolate per package directions. Add the vegetable oil and stir until thoroughly combined.

Dip each cake bite into warm candy coating, using 2 forks. Gently tap off excess chocolate. Place on a clean sheet of wax paper until candy coating sets. Drizzle with extra candy coating if desired. Keep refrigerated for up to 1 week- if they last that long!
