Description

Inspired by two of my favorite childhood sweets—chocolate mint ice cream and chocolate doughnuts!

Ingredients

  • FOR THE DOUGHNUTS:
  • 2 cups Cake Flour, Sifted
  • ¾ cups Granulated Sugar
  • 2 teaspoons Baking Powder
  • ¼ teaspoons Ground Nutmeg
  • 1 teaspoon Kosher Salt
  • ¾ cups Buttermilk
  • 2 whole Eggs
  • 2 Tablespoons Unsalted Butter, melted
  • FOR THE GLAZE:
  • ¼ cups Semisweet Chocolate Chips
  • 1 Tablespoon Unsalted Butter
  • ½ teaspoons Peppermint Extract
  • 1 Tablespoon Corn Syrup
  • 1 teaspoon Hot Water

Preparation

For the doughnuts:
Preheat oven to 425 F. Spray a doughnut pan with nonstick cooking spray.

In a large mixing bowl, sift together cake flour, sugar, baking powder, nutmeg and salt. Add buttermilk, eggs and butter. Beat until just combined. Fill each doughnut cup approximately 2/3 full.

Bake in the preheated oven for 7 to 9 minutes or until the top of the doughnuts spring back when touched. Remove them from the oven and let them cool in the pan for 4 to 5 minutes before removing them from the pan. Finish doughnuts with chocolate peppermint glaze.

For the chocolate peppermint glaze:
In a saucepan, add chocolate chips, butter, peppermint extract, and corn syrup. Put the saucepan over medium heat, and stir frequently until all ingredients are incorporated. Add hot water and stir until glaze is smooth. Add more hot water if glaze is too thick. Glaze doughnuts immediately.
