Description

While baking, the house filled with the aroma of sweetness and oranges! When they came out, they were perfect little coconut puff balls, crispy on the outside and chewy in the middle. The combination of orange and chocolate was enough to put me over the edge!

Ingredients

  • 2 cups Sweetened Coconut Flakes
  • ⅔ cups Sugar
  • ¼ cups Flour
  • 1 teaspoon Orange Zest
  • ⅛ teaspoons Salt
  • 2 whole Egg Whites
  • 2 Tablespoons Unsalted Butter, melted
  • ¼ teaspoons Almond Extract
  • ½ cups Semi-Sweet Chocolate Chips

Preparation

Preheat oven to 350 degrees.

In a large bowl, whisk together coconut, sugar, flour, zest and salt. Stir in egg whites, butter and almond extract. Fold in chocolate chips.

On parchment-lined baking sheets, place rounded tablespoon-sized balls of dough approximately 2″ apart. Bake for 20 minutes or until they are firm to the touch and lightly browned on the bottom. Let cool before serving.

Gently roll the balls of dough for a more uniform shape.

The 2nd time I made these…today! – I used 4 egg whites and no butter. Love butter but wanted to see if the egg whites would work instead and they do.

I made as written—they are really good. The orange is fairly subtle—just the way I liked it!

The exact recipe I was looking for – Thank you!

That said I made a few modification/substitutions:

Organic unsweetened finely shredded coconut from “Let’s do organic”

I backed off the sugar probably 2 T – purely as I don’t like things very sweet.

a heaping tsp of orange zest

for the chocolate, I used a scant 1/2 cup of shaving/shreds of a 60% cocoa bar.

I love them! They are smoother since I used the finely shredded coconut and I’m sure less sweet but perfect for me. The orange and dark chocolate are so good together.
