These cookies have just enough espresso for a kick and are super soft and chewy.
1. Whisk flour, baking powder, baking soda, salt and espresso powder together in a bowl.
2. With a mixer, mix butter and sugars until creamy. Add in vanilla and egg.
3. With the mixer on low, add flour mixture and then stir in chocolate chips.
4. Roll into balls and place on Pam-sprayed cookie sheet. Bake at 350°F for 14 minutes.
