Description

I was given this recipe by a girl at work. They are SO good.
It makes about 15 cookies.

Ingredients

  • 1 package Brownie Mix
  • ½ cups Unsalted Butter
  • ½ cups Butter Flavoured Shortening
  • 1-½ cup Firmly Packed Brown Sugar
  • 2 whole Large Eggs
  • 1 whole Egg Yolk
  • 1 teaspoon Vanilla Extract
  • 2-½ cups Unbleached All-purpose Flour
  • ½ teaspoons Baking Soda
  • 2 teaspoons Baking Powder
  • 3 cups Chocolate Chips

Preparation

Make the brownie as per the instructions on the box, they generally take about 40 minutes to cook.

Take out the oven and set aside to cool.

FOR THE COOKIE DOUGH:

Cut the butter and shortening in to chunks.
Beat the butter and shorting on a medium speed until creamy.
Add the sugar and carry on blending.
Add the 2 eggs and the egg yolk.
Add the vanilla extract, blend well.

In a separate bowl, mix the flour, baking soda and baking powder. Then add the flour mixture in slowly, a table spoon at a time, making sure it’s all blended in before adding the next.

Add the 3 cups of chocolate chips, stir them in well and then cover and place in the fridge to chill for 1 hour.

After one hour, get two desert spoons and a jug of warm water. Dip the spoons in to get them wet then shape a ball of dough and place it on a sheet of grease proof paper. (If you don’t wet the spoons the mixture is very sticky and hard to work with. Make sure they are a good 2 inches apart because they grow when cooking.)

Next with a wet teaspoon, make a dent in the middle of each ball, Then take a teaspoon of cooked brownie and make a ball out of it in your hand. Place it in the middle of the dough mixture.

This next part gets messy. Wet the teaspoon and reshape the dough in to a ball so it engulfs the brownie.

Put in to a preheated 350f oven for 12 to 15 minutes, checking frequently as they can over cook very easy. I found 10 to 12 minutes in a convection oven leaves them slightly chewy and GOOD!
