There are times when nothing is as satisfying as chocolate. On those days, it’s smart to have this recipe for chewy chocolate cookies handy.
Preheat oven to 350ºF.
In a large bowl, combine flour, cocoa, baking soda. and salt. Set aside.
In a large bowl with a hand mixer or in a stand mixer, beat butter and sugar until fluffy. Add eggs and vanilla. Combine well. Slowly add flour mixture. Combine well.
Drop by teaspoonfuls onto an ungreased baking sheet. Bake 8–10 minutes. Don’t over-bake; cookies should be soft. Transfer to plate to cool.

Having been on the hunt for a chocolate crinkle type cookie, I made these based on the straightforward recipe with the abundant amount of cocoa. These did not disappoint for chocolate flavor. The were soft, but not as chewy as I would have liked; they tended to crumble a bit. I tried them in various sizes and found they are best as a small cookie, the size of a store-bought gingersnap. Though similar in flavor to a brownie, they don’t stale as readily which makes them better than leftover brownies for me. I will definitely make them again!
