Description

It’s finally here. Green goddess dressing. My husband told me it tasted like a chopped up a bunch of vegetables. After taking this as a compliment, I said “Well, I kinda did.” It’s the perfect combination of fresh and summery with clean and creamy. Your mouth is kept guessing as to just what that kick is.

Ingredients

  • 1 cup Italian Flat Leaf Parsley, Or Basil
  • 2 Tablespoons Basil, Chopped
  • 2 Tablespoons Mint, Chopped
  • 2 Tablespoons Dill Chopped
  • 3 cloves Garlic, Minced
  • 1 cup Mayonnaise
  • 1 cup Plain Greek Yogurt (or Sour Cream)
  • ¼ cups Lemon Juice (2 Lemons)
  • 1 whole Anchovy
  • 2 teaspoons Kosher Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Red Wine Vinegar
  • 2 Tablespoons Olive Oil, If Needed

Preparation

Mince the parsley, basil, mint, dill, and garlic. In a blender, add mayo, yogurt, then the remaining ingredients and liquids. Begin to blend. Continue blending about a minute and a half. Add olive oil if necessary to thin the dressing to your liking.

Try it on salad, pasta salad, as a sandwich topping, on a baked potato, on your cereal (just kidding)—the options are endless!
