This easy to make strawberry jam is good to spread on biscuits or scones and is delicious mixed in with yogurt!
In a large saucepan over medium high heat add the chopped strawberries, sugar, lemon juice, salt, and cornstarch. Stir the mixture until all of the cornstarch is dissolved. Bring the berries to a boil and then reduce the heat to medium low, cover with a lid, and let them simmer for 15 minutes.
After 15 minutes, use a potato masher to mash the strawberries. Once you get the consistency you desire let the jam continue to simmer for another 10-15 minutes or until it has thickened slightly.
Remove the jam from the burner and stir in the vanilla and almond extract. Let the mixture cool slightly before pouring it into two pint size jars with lids. Store the jam in the fridge or freezer until you are ready to use it.
