This recipe is what I use to make pancakes, too! These are so good, you won’t limit them just to breakfast. Serve them at night with venison sausage.
Combine flour, baking powder, soda and salt in a bowl. Stir in buttermilk and eggs, beating with a spoon or wire whisk. Add melted butter and blend well. (If you can wait—we never can—you can let the batter rest for up to an hour before cooking it.) Bake in a prepared waffle iron or pour on the griddle for pancakes.
We love to put “add-ins” into our waffles and pancakes. Chopped nuts, chocolate chips, blueberries, cinnamon sugar. Be creative!

Yes…I use use vanilla in the batter sometimes too. A great basic recipe…crisp and light
