Description

Perfect fluffy waffles for lazy Sunday mornings! There is a bit of maple syrup that makes these good enough to eat plain!

Ingredients

  • 2 whole Eggs
  • 2 cups All-purpose Flour
  • 1-¾ cup Milk
  • ½ cups Vegetable Oil
  • 2 Tablespoons White Sugar
  • 3 Tablespoons Maple Syrup
  • 4 teaspoons Baking Powder
  • ¼ teaspoons Kosher Salt

Preparation

Preheat your waffle iron (if you have one like mine, set it to the middle “crisp” option, and then adjust from there). Beat eggs until fluffy, about double in size. Beat in the remaining ingredients until the batter is well combined and nice and fluffy. You WANT it to be airy.

Spray your preheated waffle iron with nonstick spray. Pour about 1/3 cup batter onto the waffle iron, adjusting to your individual iron, until the batter barely covers the raised waffle indentations. Close and cook until the waffles are golden brown. Serve with your choice of condiments.

I made these this weekend for brunch and they were delicious! I did let the batter set for about an hour and I think that helped add to the fluffiness. Certainly will be putting them into the regular waffle rotation. :)

Loved these! So easy and delicious! Note: unless you have a HUGE family don’t bother doubling the recipe… it makes plenty as it is! :o) (I doubled the recipe and ended up baking waffles for almost 3 hours!) LoL!

I added some chopped toasted pecans to this recipe. The waffles were very tasty. I was in the mood for pecan waffles and this recipe was perfect. It made 5 big waffles in my waffle iron. Perfect size for my family. A keeper!!
