After years of making waffles that were tough and dry, I made a batch that turned out right. Light and just barely crispy, I call them perfect.
Stir the dry ingredients (flour, baking powder, sugar, and salt) together in a large bowl until well mixed. In a medium bowl, beat the eggs at high speed for 1 minute. Into the eggs, stir in the milk and vanilla. Add this into the dry ingredients and stir or beat just until blended. Stir in the melted margarine and shortening. It doesn’t seem to matter if there are small lumps of flour in the batter, my waffles turned out perfect anyway! Bake as directed with your waffle maker.
Serve with White Sauce for Waffles (see my recipe box).
