Ingredients

  • 1-½ cup Flour (I Used Whole Wheat Pastry, All Purpose Is Fine Too!)
  • ⅓ cups Rolled Oats
  • 2 teaspoons Baking Powder
  • ⅓ cups Brown Sugar
  • ¼ teaspoons Salt
  • 1 teaspoon Cinnamon
  • 2 whole Eggs
  • 1-⅓ cup Milk
  • 1 teaspoon Vanilla Extract
  • ¼ cups Butter, Melted
  • 2 pints Fresh Blackberries
  • 3 whole Scoops Vanilla Ice Cream, To Serve

Preparation

Preheat your waffle iron and spray it with non-stick spray. (I also sprayed mine before each waffle.)

In a bowl, combine flour, oats, baking powder, sugar, salt and cinnamon. Stir in eggs, milk, vanilla and butter, mixing until combined and smooth. Fold in about 1 cup of blackberries. Make waffles per your iron’s directions.

Heat the remaining berries in a saucepan over low heat and mash with a fork until saucy. Serve waffles with warm mashed berries, syrup and vanilla ice cream.

Blackberry Cobbler is my faaaaaaavorite. I definitely want to try these for a delicious Sunday breakfast!

I thought the batter was great, and I loved making a little syrup with the berries (we added some sugar to ours). Great, easy, delicious waffles!

Absolutely delicious! Made it on to my list of all time favorites. Improvised a little by using blueberries and making pancakes instead. The batter was the best part!

Made these for dinner, everybody loved them. I thought the batter was really good, and will definitely try it with blueberries, and on its own.
