Description

This easy Tater Tot Breakfast Casserole recipe can be made with sausage, ham, or bacon. Make ahead and put in the fridge overnight or bake in the morning.

Ingredients

  • 4-½ cups Frozen Mini Tater Tots, Thawed
  • ½  Onion, finely chopped
  • 1 pound Breakfast Sausage, Cooked
  • 6  Eggs, Lightly Beaten
  • ½ cups Half-and-Half Cream
  • ½ cups Sour Cream
  • 1 Tablespoon Dried Parsley Flakes
  • ¾ teaspoons Garlic Powder
  • ½ teaspoons Pepper
  • 1-½ cup Shredded Cheddar Cheese

Preparation

Layer thawed tater tots across the bottom of a greased 9×13 inch pan. Cover tater tots with chopped onion and cooked breakfast sausage (or ham or bacon).

In a small bowl, combine eggs, half-and-half, sour cream, parsley flakes, garlic powder, and pepper. Gently stir in cheddar cheese. Pour egg mixture over the top of tater tots and meat.

Bake uncovered at 350ºF for 35–40 minutes, or until golden brown and eggs set.
