Description

These incredibly simple overnight oats are as delicious as they are nutritious. (Vegan, gluten-free and dairy-free!)

Ingredients

  • 1 whole Large Ripe Banana, Peeled
  • ¼ cups Creamy Peanut Butter
  • 1 cup Gluten Free Rolled Oats
  • 1 cup Unsweetened Almond Milk
  • 1 Tablespoon Chia Seeds
  • ½ teaspoons Vanilla Extract
  • ½ teaspoons Ground Cinnamon

Preparation

In a medium bowl, mash your banana with a fork. Add the remaining ingredients to the bowl and mix everything together until well combined.

Pour the mixture into two airtight containers. (Yes, you can just cover the mixing bowl tightly with plastic wrap. I prefer to refrigerate individual servings, but you do what you have to.)

Refrigerate the oats for at least 3 hours or overnight.

When ready to eat, give the oats a good stir. Add toppings of your choice (I’m partial to sliced bananas with honey and cinnamon or dark chocolate shavings) and dig in!

My husband and I have been trying to eat healthier in the morning and oatmeal seemed to be a great choice, however, morning time is tight and plain old cooked oatmeal was getting boring. My daughter suggested overnight oats but so many of the recipes were watery or bland. This is our FAVORITE overnight oatmeal recipe! We make it the evening before exactly to the recipe specs and in the morning we pop it in the microwave just long enough to warm it up. The peanut butter and banana make it delicious and hardy and we have used plain skim milk as well as almond milk – both delicious. Sometimes we add fresh fruit or a sprinkle of mini chocolate chips before serving. This recipe has changed our morning breakfast routine for the better – thanks for sharing!
