Fluffy and delicious whole wheat pancakes (vegan too!).
In a large bowl, mix together the flours, sugar, salt, and baking powder. In a smaller bowl, mix together the vanilla, oil, and coconut milk. Pour the wet mixture into the dry and stir until JUST incoporated. If batter is too thick, add a little more milk to thin it out.
Pour batter onto a greased griddle or pan and cook until lightly browned on each side (about 3-4 minutes).

These had a great taste, but since I accidentally skipped adding extra milk (toddler running around & fussing), the pancakes ended up being pretty thick/heavy. I’ll definitely try these again, and hopefully the additional milk will make them perfect.
*Also, I used soy milk instead of coconut milk. Would that affect the texture/density?
