Description

These Cottage Cheese Pancakes come from Russia and are called Syrniki. Served with sour cream and caramelized fruit!

Ingredients

  • 1-¾ cup All-purpose Flour, Divided
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Salt
  • 1 pound Cottage Cheese, Well Drained
  • 4 Tablespoons Sugar
  • 2  Eggs
  • ½ teaspoons Vanilla Extract
  • 2 Tablespoons Butter Or Oil, For Pan Frying
  • Sour Cream Or Yogurt, For Serving
  • FOR THE CARAMELIZED FRUIT
  • 2 Medium Pears
  • 1 Medium Apple
  • 1 Lime
  • 1 Tablespoon Honey

Preparation

Sift 1 1/4 cups flour. In a bowl, combine it with baking powder and salt. Set aside.

In a small food processor, blend cottage cheese, sugar, eggs, and vanilla until smooth. Add dry ingredients and stir well. The mixture will be sticky.

Melt the butter in a skillet over low-medium heat. It should be hot before you start frying.

Meanwhile, place remaining 1/2 cup flour into a shallow plate. Use a medium cookie scoop or any other tool you like to scoop a ball of dough and roll it in the flour. Repeat with all the dough.

Pat the dough balls from one hand to another to remove excess flour. Flatten them and put in the pan. Cook until both sides are golden. When cooked, place on paper towels.

To make caramelized fruit, cut them into cubes. Place into a skillet. Grate lime zest and squeeze the juice. Add honey and mix. Cook over high heat constantly stirring, until fruit are golden.

Serve the pancakes with a little bit of sour cream, topped with caramelized fruit.
