Description

I love pancakes—really, really love pancakes. However, I cannot eat the same, boring plain pancake over and over.

I must have variety, and from chocolate to granola, I will try it. These pina colada pancakes were a definite hit.

Ingredients

  • ½ cups Gluten Free Baking Mix
  • ½ teaspoons Gluten Free Baking Powder
  • ¼ teaspoons Salt
  • 1  Egg
  • ¼ teaspoons Rum Extract
  • ⅛ teaspoons Coconut Extract
  • 2 teaspoons Coconut Oil
  • 2 Tablespoons Sour Cream
  • 4 Tablespoons Milk
  • 2 Tablespoons Chopped Frozen Pineapple
  • 1 Tablespoon Unsweetened Shredded Coconut

Preparation

Whisk dry ingredients in a mixing bowl. Stir in egg, extracts, oil, sour cream, and milk. Fold in pineapple and coconut.

Cook on a greased griddle or frying pan as you would normal pancakes, about ¼ cup per pancake over medium heat, about 3–4 minutes each side.
