Description

I happen to be obsessed with pancakes, and decided not to rest until I came up with the perfect pancake recipe.

Ingredients

  • 3 cups Plus 2 Tablespoons Cake Flour
  • 3 Tablespoons Baking Powder
  • 2 Tablespoons Sugar
  • ½ teaspoons Salt
  • 2 cups Milk
  • 2 whole Large Eggs
  • 3 teaspoons Vanilla
  • 4 Tablespoons Butter, Melted
  • Extra Butter
  • Maple Or Pancake Syrup

Preparation

Mix together dry ingredients in large bowl.

Mix together milk, eggs, and vanilla in a separate bowl.

Add wet ingredients to dry ingredients, stirring very gently until just combined.

Melt butter and add it to the batter, stirring gently to combine. Stir in more milk if needed for thinning.

Cook on a greased skillet over medium-low heat until golden brown. Serve with an obscene amount of butter and warm syrup.

My batter came out pretty thick. I changed the serving from 6 to 2 and the system calculated automatically for me. May be there is something wrong with the conversion?

My Family LOVES Pancakes! This pancake recipe is the best I’ve found to date! Made them this morning, big hit! I did have to thin my batter down a bit with some milk because I used all purpose flour (all I had) I did sift it so it still worked out well. They were delicious! Fluffy and light, great taste.
Thanks PW, you hit the mark again!

delicious and extremely fluffy, only next time i think i’d scale down the recipe to yield 2-3 servings if i’m eating with only two people or myself.

I am disappointed… this is the first recipe I have made from this site that I don’t like. I carefully followed the recipe exactly as it is and the batter came out pretty thin. I went ahead and cooked a few pancakes, but they tasted very eggy… they were more like a thick crepe. They were not fluffy at all. So then I added a little more flour to thicken the batter a tad, but I still didn’t get the pancake I was hoping for.

With all of these wonderful comments, I think something happened to our batter. I’ve only heard wonderful things about Ree’s recipes…it has to be something wrong. Rainy weather maybe?

Good plain recipe(i.e. can go with any topping or syrup) but I would also reccomend a half cup or more of extra milk. The batter was the texture of chocolate mousse and so didn’t spread in the pan. I ended up pulling of the tops after I cooked them and making 2 pancakes from 1 drop of batter.

I feel badly because everyone seems to love this recipe.I made it for my boys this morning and they gave it a thumbs down. They found them tasteless. They were beautiful to look at though.

Delish! I love the use of cake flour. This was nice and easy, and my 4-year-old boys ate them right up! To the person who mentioned the batch was inedible, it sounds like you used baking soda instead of baking powder. If you try again with baking powder, I’m sure you’ll have much better luck!

I really wanted to love this recipe! i love PW and her story, but this one got away! Finding myself without a premade mix,. I looked up the recipe and with all the ingredients on hand, went ahead and made them. I was about done and sampled a little piece and Whoah! had to eject it! They tasted metallic! I suspect the 3 tablespoons of baking soda were the culprit. Did others have this problem? Sad that the entire batch was disposed of…
